Food & Food Waste
We are constantly expanding our vegetarian and vegan offerings. Whenever possible, we use all parts of the animal (fish bones for stock, second cuts, etc.)
Swiss mineral water is our standard, or Zermatt spring water is available on request
Valaisan agriculture offers a variety of local herbs, fruits and vegetables, which we use in our dishes and drinks whenever possible
Leftover food is turned into biogas on site, while green waste from our florist area is composted
Transportation and Travel
To reduce your carbon footprint, we encourage our guests to use public transportation. Zermatt is car free. We use our own electric vehicles or horse-drawn carriages to pick up our guests from the train station
Our partner, Julen Sport, offers electric bikes for hire at the hotel to explore the mountains
The latest technology
Conventional light bulbs are being replaced by LED technology
To save energy and increase security, we have reduced the hotel lighting at night and installed motion detectors
In our hotel, we use an advanced and automated refrigeration control system for food refrigeration, which also offers the option of heat recovery
For the most part, we do not use air conditioning in the hotel, but we do recommend ventilation with the cool mountain air of Zermatt by opening the windows. Roller shutters and awnings protect against heat radiation in summer
In our hotel we attach great importance to digitalization in order to make your stay even more pleasant. That is why you will find the guest folders and the room service menu in digital form only
Saunas are heated only during reduced hours. However, they can be heated in a very short time upon request

The “Green Committee” of Mont Cervin Palace and Monte Rosa is actively involved in sensitizing our employees to environmental awareness and responsibility
Responsible management
We donate CHF 1 to the Genolier Foundation for every grilled filet of beef sold at the Grill Le Cervin restaurant
